L'Associazione Verace Pizza Napoletana (AVPN) nasce nel 1984, con il patrocinio della Camera di Commercio, Industria e Artigianato di Napoli. I vecchi maestri pizzaioli napoletani, visto il dilagare, talvolta improprio, della denominazione "vera pizza napoletana", decisero di costituire un'associazione, con tanto di disciplinare e regolamento attuativo, per la difesa e la valorizzazione della pizza, prodotta e lavorata secondo le antiche tradizioni ed usanze napoletane. Nel 1984, Antonio Pace il figlio di Vincenzo Pace che lavora al forno da quando aveva 10 anni, decise di scrivere delle regole precise per la preparazione e lavorazione delle pizze “veraci”, avvalendosi, per la codificazione delle regole e del disciplinare, dell'aiuto e dell'esperienza dei vecchi maestri pizzaioli napoletani. Tanto lavoro ha portato a far riconoscere la pizza come Patrimonio Unesco per l'Umanità nel 2017.
